Oven-Baked Salmon served with Roasted Vegetable succotash

Oven-Baked Salmon.
Things you need:
4 pieces of salmon fillet.
1 ½ tsp salt.
Fresh ground black pepper.
Zest of a full lemon or the zest of 2 limes.
3 tbsp of olive oil.
Execute:
Firstly, you need to preheat
the oven to 350 degrees. Now rub the lemon of lime zest all over your salmon
and then season with salt and pepper. Get some parchment paper and lightly
brush it with olive oil and season it ever so slightly and place salmon, skin
side down. Bake until salmon is cooked through, about 12 to 15 minutes. Serve
with the vegetable succotash.
Roasted Vegetable succotash.
Things you need:
1-pound yams (red-skinned sweet potatoes), peeled
and diced.
8 ounces parsnips, peeled and diced.
1 red bell pepper and diced
1 medium leek (white and pale green parts only),
cut into 1/2-inch pieces.
3 tbsp olive oil.
2 garlic minced cloves.
1 cup of frozen corn and thawed.
4 tbsp chopped fresh parsley.
1 tbsp chopped fresh thyme.
1 tbsp salt.
1/2 tbsp fresh ground pepper.
Execute:
Since your oven already has been preheated to 350
degrees. So, you already got one thing done yay you.
Now get an oven tray and toss in the first 4
ingredients, 3 tbsp olive oil, and garlic all in the tray and mix well with the
salt, black pepper, and the thyme spread in single layer. Roast until the
vegetables are almost tender, stirring occasionally, about 30 minutes in, stir
in the thawed corn roast until all vegetables are tender, give it 5 to 7
minutes longer. Once everything is cooked sprinkle the chopped parsley, serve
up with the salmon and enjoy.
