Making fresh pasta.


This is one of the simplest ways to make fresh pasta at your house, it does not take a lot of your time, and it’s very fun to make specially if you have kids all around you they love to get their hands into flour and just get messy.

Making fresh pasta.

Things you need:

2 1/2 cups of all purpose flour.
1/3 tsp of salt.
3 eggs.
1 tbsp olive oil.

Execute:

Pour the flour on a clean working space try to make a dome then make a well in the center of it. In a separate bowl mix the eggs, salt, and the olive oil all together. Pour into the well you made in the flour with a fork keep mixing and gradually mix the flour with the liquid until the mixture becomes too thick to mix with the fork.

Now you might find the dough a big liquidly or very thick. If the dough is too thick just add 1 tsp of recently boiled water that have been brought to room temperature. If the dough is too liquidly just add 1/2 cup of flour but don’t pour it at once keep adding it gradually. Usually this does not happen, but it really depends on the humidity of the room, and the temperature of the eggs. 

Assuming you have the perfect dough, you must fold the dough with the palm of your hand, fold and spread again with the palm of your hand. Once the dough is perfect grease a bowl with a little bit of olive oil place the dough in it and let it rest in the fridge for 30 minutes, I have found that the longer you rest the dough the finer it becomes, so it is up to you how long you want to rest the dough but the minimum you must keep it in the fridge 30 minutes. 

The dough now has rested and good to go the labour of love shall commence. On your working space spread about half a cup of flour and rub the rolling pin as well. Open the dough until the dough is about 1/2 of an inch thick. 

If you have a pasta machine you can use it, if not just use a sharp knife in cutting the pasta. Let the finished pasta rest for about 7 to 10 minutes uncovered before cooking. 

Remember this is a base pasta recipe so you can make stuffed ravioli with it, tortellini, and all sort of pasta really.
