Sun dried tomato pasta chicken.
Mondays are usually hard and difficult for some people, specially
when it comes to making a meal. So here is a recipe that is so easy and simple.
When it comes to easy and simple it comes down to one thing for me which is pasta.
It’s fast to make and you can never go wrong with it. I hope you get to try out
this recipe.
Sun dried
tomato pasta chicken.
Things you need:
900 g of
Fusilli pasta.
1 tbsp
butter.
3-4 chicken
breasts cut into cube size.
2 tsp Italian
seasoning.
1 1/4 tsp
grounded cayenne pepper.
About 10 slices
of sun dried tomato.
3 garlic cloves
minced.
1/2 cup of
35% cooking cream.
1 1/2 cups
of milk.
Pack of
white mushrooms.
1 cup
chicken broth.
1 1/2 cups grated
Mozzarella cheese. However, you can use whatever cheese you have.
1/2 tsp
salt.
1/4 tsp freshly
grounded black pepper.
3 cups of
baby spinach.
Execute:
Cook the pasta according to the package instructions, once its
cooked drain it and give it an ice bath. That stops the pasta from over cooking
and turning to mush.
Melt the butter in a large pan over medium high heat. Add the chicken, the
Italian seasonings, the cayenne, salt and black pepper. Sauté the chicken until it’s cooked,
and then remove the chicken from the pan.
Take out the dried tomato slices and drain them from the oil, chop them
to smaller pieces, add them to the pan with the garlic and mushrooms and sauté
for a few minutes, while cooking the dried tomatoes you’ll get some oil out of it
which is fine it’ll give the dish a nice flavor.
Add the cooking cream, milk, chicken broth, and the grated cheese. Stir
until the sauce is smooth and bubbly and the cheese has melted. The sauce should’ve
thickened slightly by now, no worries it’ll keep on thickening once adding the
pasta and the chicken.
Now stir in the pasta, and chicken fold in with the
sauce let everything absorb the flavor now add in the baby spinach. The spinach
might seem a lot but no worries it will shrink in size and almost disappear. If
needed, and you find the sauce has thickened more than you want just add a
little bit of chicken broth or milk to the sauce to thin it out. If the opposite
happens and the sauce is very thin add more cheese to thicken, stir it for a
full 5 minutes to really thicken.
